Easy Week Night Meal
Both my husband and I work full time jobs outside of the home. During the week this means dinner is often the bane of our existence. So I made it my mission to collect a handful of meals that could be made at home quickly, are delicious, nourishing, and most important an easy clean up. There is nothing more annoying than waking up to an unkempt kitchen.
One of my favorites is homemade chicken soup. Well… mostly homemade.
I start by logging into Fresh Market https://www.thefreshmarket.com and setting my preferences to curbside pickup. Any grocery store will work but I enjoy Fresh Market because their curbside seems to be the most efficient.
Now for the ingredients.
Bonafide Organic Chicken Broth
Rotisserie Chicken
Organice Celery Stalk
Organic Carrot Bunch
Yellow Onion
Scallions
Serrano Pepper (If you enjoy a little kick)
Black Pepper to taste
Chop the ingredients to your desired size. Follow by placing into a pot, on medium heat. Cover with a lid and let simmer for 30-45minutes. The ingredients are all cooked or edible prior to going into the pot, so simmer time can vary as needed. Sometimes if I have extra time I will leave on for up to an hour, lowering the heat after 30 minutes.
This is one of my favorite meals because its so flavorful and can be easily adjusted to taste by changing the ingredients, spices, or portions. Additionally it can be really beneficial for the body to have at least one warm nutritious meal a day. I would say it’s the equivalent of a hug for your tummy and digestive system. If you want something a little heartier try adding chopped potatoes, pasta, or rice of choice.
The best part about this meal? You will easily have enough for the next night or a few days worth of lunch. All from one meal!
